SC Wildlife Federation’s Forks, Knives, and Spoonbills: A Conservation Dinner

Join the South Carolina Wildlife Federation at Spotted Salamander in Columbia for a five-course conservation dinner. Featuring dishes inspired by imperiled bird species created by Chef Jessica Shillato, as each course is served, SCWF Habitat Education Manager Jay Keck will share information about each species and the conservation efforts needed to help them thrive.
Ticket revenue will support the wildlife and habitat conservation and education programs of SCWF. Event sponsored by Columbia Water.

Inspired by: Red-headed Woodpecker – Cacio con Pepe butter beans with roasted tomatoes and toast
Second Course
Inspired by: Baltimore Oriole – Housemade pasta, ricotta, collard chow chow, herb browned butter, pecan pesto
Third Course
Inspired by: Bobolink – Deviled egg with crispy pancetta, Firelli hot sauce.
Fourth Course
Inspired by: Eastern Towhee – Bacon wrapped shrimp, sorta mashed green peas, griddled onion, mushroom “browned” Carolina gold rice
Fifth Course
Inspired by: Scarlet Tanager – Cannoli cheesecake
Event tickets are $120 per person. Vegan or vegetarian option also available.
