Tarragon Turkey Salad

Poultry such as turkey is an ideal source for animal protein. A 3-ounce serving of boneless, skinless turkey breast contains 26 grams of protein, about 1 gram of fat and nearly 0 grams of saturated fat. This tasty salad keeps calories on the lower side with low-fat Greek yogurt and low-fat or light mayonnaise. 

Number of Servings: 6
Ingredients: 1 1/2 pounds roasted, skinless turkey breast, cut into bite-size cubes
1 small red onion, coarsely chopped
4 stalks celery, coarsely chopped
1 roasted red bell pepper, seeded, cut into strips
1/2 cup Greek nonfat yogurt
1/2 cup low-fat or light mayonnaise (preferably Hellman’s brand)
1 tablespoon fresh lemon juice
2 to 3 tablespoons chopped fresh tarragon leaves
2 tablespoons chopped fresh parsley
sea salt and black pepper, to taste
1/3 cup roasted chopped nuts (walnuts, pecans, hazelnuts)
leaf lettuce
Directions: 1.Gently toss turkey, onion, celery and bell pepper together in a large bowl
2.In a small bowl, blend yogurt, mayonnaise, lemon juice, tarragon and parsley
3.Add salt and pepper, to taste
4.Fold dressing into turkey mixture
5.Serve each portion of salad on lettuce leaves
6.Sprinkle lightly with nuts.
